Bread making day. Well, it's bread making day three to four times a week. STILL. I love the smell of fresh bread.
In other news, just finished switching to Virgin, and all is well and good here. Downloading Anarchy Online to run through Crossover and see if I want to play it or something. We'll see. I'm still waiting for Star Trek Online.
It may be a two carafe morning. *goes to make more coffee* Can't think.
Still, it's bread making day (not an unusual occurance) and that is always a good thing.
Trying to decide if I can be bothered to make cinnamon rolls as well.
Coffee is good. My sisters brownies look fantastic but I can't eat them *cries moar*
Can't type today.
The last muffins were a complete disaster.
Let's try again, with a different recipe.
Banana Nut Muffins
2 cups self raising flour
1/2 teaspoon salt
4 overripe bananas
1 cup brown sugar
3/4 cup (1 1/2 sticks) unsalted butter, melted and cooled
2 eggs
Preheat oven to 190 C and lightly butter 2 muffin tins.
In a large bowl, combine the flour, baking soda, and salt; set aside. Mash 2 of the bananas with a fork in a small bowl so they still have a bit of texture. Mix the other two banana's together with sugar. Add the melted butter and egg and beat well. Mix in the dry ingredients just until incorporated. Fold in the mashed bananas. Spoon the batter into the muffin tins to fill them about halfway. Give them a rap on the counter to get any air bubbles out.
Bake until a toothpick stuck in the muffins comes out clean, 18 to 20 minutes. Let cool for a few minutes before turning the muffins out. Serve warm or at room temperature.
I have no idea where I get the recipes from. I have a huge text folder with them all in.
I think it's these muffin tins to be honest. I need to get proper new metal ones. Still, these turned out alright, I just had to cook them a little longer.
It's what i fill my time with. Tonight I decided to make muffins. Sour cream muffins. If they work, I may substitute the sour cream with yoghurt. We'll see. Adding choc chips to some (not all or I can't eat them if I want to live), and craisins and almond slivers to others, leaving some plain.
Two cups of all purpose flour, about 300ml of sour cream, about 250g of butter, melted. Combine, put into muffin pans (I always grease and flour the cups, and never use paper liners). Heat oven to 180c and cook for half an hour.
We'll see how they turn out. If good, I may add pics later.
